Almond Milk

Soak one cup of almonds in water overnight. Drain and place in blender with 1.5 litres of fresh water and blend till smooth.

Strain through a fine sieve or cheese cloth and keep the remaining pulp for the recipe below.

The milk is ready to drink as it is but is fabulous with a dash of maple syrup and cinnamon powder.

Rejuvenation Balls

2 C rolled oats
11/2 Tbspn spirulina powder
11/2 Tbspn carob powder
1 C threaded coconut  
2 tsp cinnamon
1 C nut or seed butter
1/2 C honey
1/4 C fruit juice (undiluted blackcurrant juice is great)
1 C almond pulp
1 C raisins

Whizz oats in a food processor until coarsely ground. Add carob powder, cinnamon and spirulina and whizz briefly to blend evenly, tip into a large bowl along with the threaded coconut.

Place honey, nut butter and raisins in the blender and blend till raisins are coarsely broken up. Add fruit juice and almonds and blend till smooth.

Tip into bowl with the dry ingredients and mix together.

Roll mixture into little balls and store in the fridge. The mixture may be a little sticky but becomes more formed once cold.
