This summer is a bumper season for avocados, and to celebrate, we're giving away five boxes of the super fruit. With 25 avocados to a box, you'll be set for healthy and delicious holidays ...

It's no secret that avocados are a super fruit. Packed with almost 20 vitamins, minerals and phytonutrients, they're the only fruit full of monounsaturated fat (aka the best kind). Used as a spread in place of butter or margarine, avocados help reduce your cholestrol intake ... and they're even good for your eyesight.

You can use avocados as a skin treatment or freeze them for emergency guacamole supplies? And how about these ideas for using avocados quickly:

  • Stir cubed avocado through an omelette with tomato and cheese or into scrambled egg
  • Mash up on toast with tomato and feta cheese
  • Top a cooked pizza with slices of avocado
  • Use in mashed potato in place of butter
  • Top grilled chicken with diced avocado and crumbled feta

Avocado - yum.  On toast with salt and pepper; in salads; on top of steaks; Guacamole; on top of chilli instead of sour cream; as spread in sandwiches .... yum yum yum.

Diced tomatoes (canned) + chopped onion + 2-3 avocados + chopper coriander leaves + dollop sour cream + salt and pepper. Mix well with fork, mashing as you go :-)

Can't beat a dollop of guacamole on all sorts of things - burritos, nachos, crackers, even a chickpea curry.  Mashed avocado, lemon juice, salt and chopped tomato and it's game on!

Nothing beats perfectly ripe avocado on Vogels toast - it's the first thing I eat whenever i've been overseas, it makes me feel like i'm really home.

My wife makes a really simple avocado dip with fresh avocado, italian parsley, lemon and chilli - it is a taste explosion that I never tire of. Whenever I see avocados on our fruit bowl I know i'm in for a treat!

Salmon Tartare


4 servings


 


 


4 small avocados


1 tablespoon extra virgin olive oil


Salt, to taste


Freshly ground pepper, to taste


Juice of 2 lime


1 pound fresh salmon fillet


Salmon caviar, for garnish


Chopped parsley

Lettuce leaves for garnish


 DRESSING


Juice of 1 lime


Pinch cayenne pepper


2 shallots, finely chopped


1 garlic clove, minced


3 tablespoons Roaring Forties vodka


1 teaspoon soy sauce


 


In a food processor:
puree the avocados with the olive oil, salt, pepper and juice of 1 lime. (Place in seperate bowl and insert seed into mixture to prevent from turning brown )


Dice the salmon fillet to a rough paste. (Tartare ) Place in seperate bowl )


Refrigerate avocado mixture and salmon, until ready for use. (cover with plastic wrap)

To prepare the dressing:
In a bowl, whisk together the juice of 1 lime, cayenne pepper, shallots, garlic, R/F vodka and soy sauce.


To serve, spoon the avocado puree into four martini glasses lined with lettuce leaves. Top with diced salmon and dressing. Garnish with salmon caviar sprinkle with chopped parsley

I love to use avocados for guacamole, the more avocado the better!
Add finely diced onion, crushed garlic, sweet chilli sauce, a splash of lemon or lime juice, chopped tomato and mix together.
Great with corn chips for that delicious summer taste with just a hint of a kick.
We can never get enough of this and would happily eat it every day.

I love advocado diced in a couscous salad with sundried tomatoes, bacon and pinenuts. Topped off with a lemony dressing - yum!

Chopped into chunks/diced in a mesculin or spinach salad, with chopped red onion, diced orange, and sprayed with your favourite balsamic vinegar and olive oil.

most mornings for breakfast i toast a couple of slices of gluten free bread, spread a thin layer of shiro miso and then top with fat slices of avocado and a squeeze of lemon.  on the weekends i poach a free range egg and add it to the pile.. just delicious!

Avocado salsa, YUM! You will need couple of avos, one tomato, spring onion, lime or lemon juice, pinch of cayenne, pinch of cumin. Cut in small chunks, mix and season to taste. Done.

Half an avo with one tablespoon on active manuka honey mix it together and pop it on your face for 30 mins. It smells delicious, feels great and is completely natural.

My fav has to be guacamole. Its simple but so versatile and such a good way to dress up a boring meal!

keep it simple: halve an avocado, and fill the centre (where the pit was) with 2/3 malt vinegar and 1/3 olive oil. top with salt and pepper and eat on its own with a teaspoon. avocado delicious-ness.

I love Avocado and freeze them when cheap.Just mash with lemon juice to stop them going brown then freeze in small containers.It is easy to grab a bit out when you fancy some and it soon thaws.I love it on toast with garlic salt and a squeeze of lime or lemon ,add to pizza ,salad or anything else also I have a habit of eating them wit ha teaspoon as a fruit too.
Keep the skin and gently scrape whats left out and use as a face mask too as the oils come out of the skin with it.

I make an avocado chocolate pudding that is decadent and divine! It is also rather good for you:)
In a blender:
1 avocado
1-2 tablespoons Raw Cacao
Pinch of vanilla powder (or a scrape of vanilla bean)
1 tablespoon of sweetener of choice
(Honey, coconut sugar, agave nectar, stevia)
Sometimes I add frozen strawberries, rasberries or blueberries for a bit of tang.
Depending on your blender, you may need a little water to get the mixture going.
Grate some lemon zest on top and your ready for a delicious and nutrient dense dessert!

I love avocado soup- fry onion in a little oil, add 1tbs frour and 4 cups of vege stock and 1 mashed avocado. Simmer 5 minutes, season, pinch of cayenne and sprinke with paprika. Yum!

Slice avocados, add lots of lemon juice, chilli powder or flakes, pepper, pinch or sugar and salt and chopped tomatoes and onions, and roughly mash with fork.. Makes a wonderful dip that is so fresh.. Can also be tossed in salads

Use a fork to mash an avocado with lemon juice from one lemon, or enough for your desired consistency. Add lashings of pepper and salt, and paprika optional. So simple, and so delicious on my toast at lunch time

Avocado dip. Mash up an avocado, splash in some Braggs and sweet chilli sauce, about 1-2 tsp each. It's delicious with rice crackers either seaweed or wasabi.

We love guacamole in our family.... Best ever recipe...

Shirl's Guacamole

Finely dice a red onion, 2 teaspoons crushed fresh garlic, Juice of lime or lemon, few drops of tobasco sauce, 2tablespoons of sweet chilli sauce, 1 large advocado mashed, 1 large red tomato or 8 yellow cocktail tomatoes diced. Add chopped coriander if desired.
Mix all together  and enjoy! Great with corn chips or pita crisps (less fattening). Very decadent served on top of fish/salmon.

Anytime hunger treats.....

Slice advocado onto triangles vogels toast, add slices of tomato and top with fresh basil leaves - delicious!


On mini pikelets (blinis) spread low fat cream cheese, add mashed advocado and top with slithers of fresh smoked salmon, cracked pepper and garnish with fresh coriander.


Crostini's

Grill sliced baguette spread with garlic butter.....
 
Spread with advocado and garnish with baby greens

or; Spread with advocado and top with pastrami - garnish with a basil leaf

or; Spread with advocado and top with smoked salmon - garnish with a coriander leaf

or; Spread with advocado, smoked salmon and garnish with caviar


Great for all year round treats!

My favourite dip is so simply made by mashing a ripe avo with lime juice, lemon pepper seasoning and a couple of spoonfuls of plain, low fat yoghurt. I add a splodge of Wasabi paste and a big handful of fresh, garden herbs, chopped finely. It makes the greenest, zingiest dip to accompany corn chips or crisp vegetable crudites.

Finn Friendly Chocolate Pudding!!!!!!!!!!!!!!!!!!!!!!!!
2x avocado
2x banana
1/2 can coconut cream
3 tbsp raw cacao powder
dash vanilla essence
dash of cinnamon

Blend it all up in food processor, put into individual serving dishes, refrigerate for a couple of hours to set...and serve with berries and sprinkle of grated dark choc on top.

Also reaally nice frozen!

My best recipe is a tie between Vogels toast covered in mashed avocado, sweet chilli sauce and a hint of salt and pepper and Eggs Benedict with avocado instead of butter on the toast/muffin

Slice into cubes 2 or three avos
slice into cubes 4 or so Tomatos
stir through some oil, Fresh Basil, salt and Pepper - hey presto - an incredibly yummy salad - or try adding feta! yum!

Raw and Vegan chocolavo mousse

















Ingredients



 



    * 6 
medjool dates soaked for 2 - 4 hours in 1/4 cup maple syrup



    * 1⁄2 t
vanilla



    * 1 1⁄2
avocadoes



    * 1⁄4 c baking cocoa



    * 2 T carob
powder



    * 1⁄4 c water



 



Instructions



 



Place the maple syrup soaked dates and all other ingredients in a food
processor and process until smooth and creamy...and that's that! Yum - enjoy!

Raw brownie!

Base: 
2C dates
2C nuts (cashews/almonds etc)
1/4 cup cocoa/cacao 
Mis together until sticky and press into tin.

Icing:
2 Tbsp agave/maple syrup/honey etc
1/4 cup cocoa/cacao 
1 ripe avocado
Salt
1tsp vanilla
Mis together and ice the base.

Freeze and enjoy... So delicious and so healthy! The avocado makes a beautiful. smooth creamy icing.

Tofu, Chilli Stuffed and Avocado Bake - this is amazing!!! Similar to this  - http://whattocook.com/recipes/recipes1/bakedavocado.html -  but with a tofu, chilli stuffing - yummy!
