Chilies can be pretty inconsistent, says expert chef Angus Allan. Here are a few tips for how to make the most of them:
- Check their heat by slicing one end off and placing it on the tip of your tongue. If there is no real heat in the chili, increase the amount you use and add the seeds. If the chili burns, use a lesser amount.
- Wash your hands immediately after handling chilies
- Whatever you do—don’t touch your eyes, the baby or any other food.
- Don’t make dessert straight away either, or it may also end up tasting of chili!
