Baked apples with caramel sauce

Baked apples are the simplest and tastiest winter pudding. Be sure to use Granny Smith apples for their tart taste and smooth texture when cooked. Prepare the apples while the rest of the dinner is roasting, then submerge in a bowl of cold water to prevent them browning. Just before you’re about to sit down to the main course, assemble the apples and pop them in the oven. 

They’ll be ready by the time you and your guests are in the mood for dessert. 

6 Granny Smith apples, cored
3/4 cup brown sugar 
1 tsp cinnamon
1 tsp mixed spice
1/2 cup dates, halved 
1/2 cup chopped walnuts or other nuts (optional)
3 tbsp butter
1 cup water
thickened cream or yoghurt, to serve 

Place apples in a baking dish. (Cover with water until ready to bake). Mix together sugar, spices, dates and nuts.

Push equal portions of the mixture into each apple’s core. Place half a tablespoon of butter on top of each apple. Pour over water and bake apples in still-warm oven (180°C) for 30 minutes. The insides will go soft and the skin will be wrinkly. 

Serve with thick cream or sweet yoghurt.
