Blueberries are the hero ingredient in this richly dark, thick and creamy smoothie. Blueberries are wonderfully rich in antioxidants, which can help to counteract premature ageing. They’re also deliciously sweet so add them to things like porridge at breakfast time or have them on their own as a mid-afternoon snack. Another healthy snack I love is blueberries with natural yoghurt.
Better still, whip up my Blueberry and Coconut Escape smoothie recipe. I poured this smoothie into a bowl and ate it with a spoon – it's garnished with coconut chips, blueberries, goji berries and chia seeds – but you don’t have to be so fancy; just blend the main ingredients and pour into a glass to drink from if you prefer. Double the recipe to make one for a friend. She'll thank you for it!
Blueberry and Coconut Escape smoothie
1 cup of coconut water
1 cup of blueberries (frozen or fresh)
1 banana (frozen ideally, skin off)
A drizzle of maple syrup
A handful of ice
2 mint leaves (washed and torn)
Place all the ingredients into a blender and whiz them together. Now it’s ready to pour into a smoothie bowl or glass – and enjoy. For an extra protein boost add one scoop of NuZest's Clean Lean Protein Smooth Vanilla flavour.
