Greens in a Cup

There’s no chore in eating your vegetables with this fresh and creamy, subtly sweet, power drink.

Spinach grows like a weed in my garden most of the year. I hack it back regularly when I make salads or smoothies. I love nothing more than a green smoothie post teaching yoga. This one is so full of goodness with all its antioxidants and nutrients – helping us to feel (and look) great. 

My kids love this smoothie without any bribery because of the sweetness of the pear. They guzzle it back like mini Popeye chaps. I hope you too get a kick out of this smoothie’s “super powers”.

Serves 1–2

250ml coconut water 
4 medium spinach leaves 
½ chopped pear (bosc variety, remove pips) 
½ an avocado 
4 cubes ice 
1 tablespoon coriander 
2 mint leaves 

Wash the greens under water. Then place everything in a blender and blitz until smooth. Pour into a glass and savour.
