Sticky Orange and Honey Chicken Nibbles

Chicken nibbles always go down a treat and will be gobbled up fast! 

Chicken nibbles always go down a treat. They are super-easy to make either on the morning of the picnic or the night before. They only take five minutes to prepare and then go into the oven for 30 minutes. You can easily make these while the frittatas are in the oven at the same time. Adults and kids alike will love these. 

2 kilograms chicken nibbles
2 oranges
2 tablespoons honey
1 tablespoon olive oil
1 garlic clove, crushed
1 teaspoon fresh ginger, peeled and grated

Preheat the oven to 180°C and line a large baking tray with baking paper. Zest one orange and then juice both of them. Place the juice, zest, honey, olive oil, garlic and ginger in a large bowl and whisk until well combined. Set aside a little of the marinade for glazing.

Add the chicken nibbles to the bowl and turn to coat well in the marinade. Place the chicken on the baking tray, ensuring there is space around each one. Roast for 30 minutes or until golden, using a brush to baste with the reserved marinade about halfway through. Once cooked through, remove from the oven and place in a container ready for the picnic. 

Serves 6–8. Preparation time 5 minutes. Cooking time 30 minutes.
