Plant-powered smoothies are full of goodness. This one is thirst-quenching as well as a great way to inject more greens into your day, and you’ll find its vibrant colour irresistible.
I liken this smoothie to summer in a glass; sweetened just enough with pineapple and banana, its hero ingredient is the fresh, young coconut, which is soft in texture. As well as having a lovely flavour, coconuts contain antibacterial properties.
For an extra protein boost add 1 scoop of NuZest’s Clean Lean Protein powder (smooth vanilla flavour).
5 spinach leaves
¼ cup coriander leaves
1 frozen banana
1 tsp lime zest
1 tbsp lime juice
¼ cup pineapple pieces – can use tinned if you don’t have fresh
flesh of 1 young coconut (any brown bits removed)
250ml of the coconut’s water
Put all the ingredients into a blender (we used a Vitamix) and blitz. Pour into a glass and savour – with stillness if you can.
