Orange Choc Chip Quinoa Mousse

Up your protein intake and treat yourself at the same time.

Serves 4


  • ¾ cup cooked quinoa
  • 400ml-can coconut cream
  • 4 tbsp maple syrup
  • ¼ cup goji berries, soaked
  • in hot water to soften for 10 minutes
  • ¾ tsp orange essence
  • ½ cup vegan chocolate chips

Optional toppings

  • chocolate sauce
  • fresh orange slices

What to do

Blend cooked quinoa, coconut cream, maple syrup, drained, soaked goji berries and orange essence in a high-powered blender until smooth.

Transfer to a container and stir through the chocolate chips. Refrigerate overnight. Serve with chosen toppings or on its own.
